Butter Chicken Curry

Ingredients: (serves 1)
Half kilo of chicken breast or thigh
2 chillies
2 onions
1 tomato
Coriander
1 cinnamon stick
1 bay leaf
A few cardamon pods
Butter ghee
Ginger and garlic paste
Turmeric powder
Chilli powder
100ml single cream
Sugar
Salt
Spice Mix as follows (mixed and blended together):- 1tbs turmeric, 2tbs paprika, 2tbs curry powder, 1tbs cumin, 1tbs coriander, half tbs chilli powder, half garam masala
Method:

Spice Mix as follows (mixed and blended together):- 1tbs turmeric, 2tbs paprika, 2tbs curry powder, 1tbs cumin, 1tbs coriander, half tbs chilli powder, half garam masala
Method:
- Add a teaspoon of butter ghee and a teaspoon of ginger and garlic paste into a cooking pan and once sizzling add the cinnamon stick, bay leaf and a few cardamon pods to create the aroma, then leave to to sizzle on a low heat.
- Chop the onions, tomato chillies and coriander and add to the pan with a pinch of salt.
- Cut up the chicken and marinade it by adding 1 tablespoon of ginger paste, one teaspoon of turmeric powder and one teaspoon of chilli powder, leave for 10 minutes.
- Add two tablespoons of the Spice Mix and a cup of water to the pan, so the spice doesn't burn, leave for 3 minutes.
- In a separate pan, add a small slice of butter ghee and the chicken pieces. Once the chicken is sealed, add to the sauce and leave on a low heat for 10 minutes.
- Add 50g butter, single cream and one tablespoon of sugar. Cook for 5 minutes and then take down the heat and leave to simmer.
- Dress with a little coriander and serve with rice.
