Crumbly Nut Roast
You don't have to be a vegetarian to enjoy a Nut Roast. Why not make this instead of the traditional Sunday roast. You will be surprised how much you and the family will enjoy it!
Ingredients: (serves 4)
40g butter
1 onion - chopped
1 celery stick - chopped
250g mixed nuts - coarsely chopped
3 large tomatoes - skinned and chopped
175g breadcrumbs
1tsp dried mixed herbs
quarter tsp chilli powder
2 eggs - lightly beaten
salt and pepper

Method:
- Heat the oven to 220'C or Gas Mark 7.
- Grease a 500g tin and line the base with greaseproof paper.
- Melt the butter in a large saucepan and fry the onion and celery for 5 minutes without letting t brown.
- Add the nuts, tomatoes, breadcrumbs, mixed herbs, chilli powder and a dash of salt and pepper.
- Add the eggs and mi together well, then taste and add more salt and pepper or herbs if it needs it.
- Spoon the mixture into the prepared tin, cover with foil and bake in the oven for 55 minutes.
- Take off the foil, turn the loaf out on to a dish and serve with potatoes and peas.
