USING UP LEFT OVERS - Pork Stir-Fry


Stir-fries are one of the healthiest and tastiest ways to use up left-over vegetables and so they are pretty cheap to make, as you don't have to add much meat - or you could just use the vegetables!  You and your family may be watching the FA Cup Final tomorrow afternoon between Hull and Arsenal, so what better time to try a pork stir-fry before the match, while it's on the TV, or afterwards. It is so fast and easy to cook, it wont interfere with watching the football. Here goes...

Ingredients (serves 4):-
2tbs vegetable oil
2 garlic cloves, finely chopped
1tsp fresh root ginger, grated 
1chilli, deseeded and finely chopped
1 red pepper, cored, deseeded and cut into strips
3 carrots, cut into strips
1 large onion, sliced
250g pork, cut into cubes
1 courgette, sliced
1 small broccoli head, divided into florets
For the sauce:
2tbs soy sauce
2tbs orange juice
1tsp tomato puree
1tsp vinegar
1tsp brown sugar


  Method:-
  • Heat the oil in a wok or large frying pan and add the garlic, ginger and chilli to warm them up but d not let them colour.
  • Chuck in the pepper, carrots, onion and pork and stir-fry over a medium to high heat for about 5 minutes then add the courgette and broccoli. 
  • Stir in the sauce ingredients and let them bubble, then toss the ingredients through the sauce and stir-fry for a few more minutes.
  • For a filling meal eat with rice or noodles.
