USING UP LEFT OVERS - Pork Stir-Fry
Ingredients (serves 4):-
2tbs vegetable oil
2 garlic cloves, finely chopped
1tsp fresh root ginger, grated
1chilli, deseeded and finely chopped
1 red pepper, cored, deseeded and cut into strips
3 carrots, cut into strips
1 large onion, sliced
250g pork, cut into cubes
1 courgette, sliced
1 small broccoli head, divided into florets
For the sauce:
2tbs soy sauce
2tbs orange juice
1tsp tomato puree
1tsp vinegar
1tsp brown sugar
Method:-
- Heat the oil in a wok or large frying pan and add the garlic, ginger and chilli to warm them up but d not let them colour.
- Chuck in the pepper, carrots, onion and pork and stir-fry over a medium to high heat for about 5 minutes then add the courgette and broccoli.
- Stir in the sauce ingredients and let them bubble, then toss the ingredients through the sauce and stir-fry for a few more minutes.
- For a filling meal eat with rice or noodles.
