Pepper and Brie Penne

It's pasta on the menu for tonight's supper in our house, and I fancy this easy but tasty dish. If you don't like Brie then why not try this with Gorgonzola, instead? Just swap the cheeses and use parsley instead of dill. Why don't you try it tonight or this weekend - you'll love it!

Ingredients (serves 4):
4 courgettes - sliced
1 red pepper  cored, deseeded and sliced
1 green pepper - cored, deseeded and sliced
1 yellow pepper - cored, deseeded and sliced
375g penne pasta - fresh or dried
175g ripe Brie
2tbs olive oil
1 bunch of dill - chopped
salt and pepper

  • Grill the courgettes and peppers under a hot grill for 5 to 10 minutes, turning occasionally.
  • Cook the pasta according to the packet instructions. Drain well and return to the pan.
  • Add the grilled vegetables, Brie, oil and dill to the pasta.
  • Sprinkle with salt and pepper, stir over a low heat for 5 minutes and then serve.
