Leeks Baked in Blue Cheese

Most supermarkets are offering some tremendous deals on fresh vegetables this week and over the Easter period. Morrison's, for example, have three fresh veg for £1 - that's 33p for a packet of leeks or a bag of potatoes or a bag of carrots. There is no excuse then to get fresh vegetables into your diet at this price. Long may it continue!

What about some leeks this week, baked in blue cheese as a lunchtime treat. How delicious is that - and the emphasis is on simplicity with this recipe. Just let the different flavours pour out naturally.


Ingredients: (serves 4)
750g leeks - trimmed and halved
2tbs hazelnut oil
4tbs vegetable stock
15g butter
125g dolcelatte cheese - crumbled
2tbs hazelnuts - chopped
salt and pepper

Method:
  • Heat the oven to 200'C or Gas Mark 6
  • Ina  bowl, toss the leeks with the oil and place in a large roasting tin with the stock. 
  • Bake in the oven for 15 minutes
  • Dot the leeks in the butter, cheese and nuts and then pop back in the oven and cook for another 15 to 20 minutes until the leeks are tender and the cheese has melted and is golden. Sprinkle salt and pepper and eat straight away or why not spread on toasted ciabatta for a tasty snack.
