Vanilla Fairy Cakes

These cakes are easy and fun to make. When you have practiced then you can try out some of the variations I have given here.


Ingredients: (makes 12)
150g butter or margarine - sotened
150g master sgar
175g slf-raising flour
3 eggs
1tsp vanilla essence

Variations:-

Chocolate
Add 15g cocoa powder instead of 15g of the flour
Chocolate chip
Add 50g plain dark, milk or white chocolate chips.


Coffee
Add 1tbs expresso or strong coffee powder.
Citrus
Add the finely grated rind of 1 lemon.
Cranberry or blueberry
Add 75g dried cranberries or blueberries, chopped if large.

Method:
  • Heat the oven to 180'C or Gas Mark 4.
  • Put all the ingredients in a large bowl and beat until light and creamy.
  • Divide the mixture evenly among 12 paper cake cases.
  • Bake in the oven for 18 to 20 minutes until risen and just firm to the touch, then put on a wire cooling rack or plate to cool.
