MUSHROOM KORMA

If you love a an aromatic dish as oppose to a fiery one, then this is perfect. It's best served with brown rice and maybe a naan bread. It's quick and easy so why not try it this week!


Ingredients:- (serves 4)
2tbs vegetable oil
1 onion - finely chopped
1tsp grated root ginger
1 green chilli - deseeded and chopped
500g button mushrooms - halved
1tsp chilli powder
quarter tsp turmeric
2tsp ground cumin
1tbs ground coriander
200g can of chopped tomatoes
1tsp sugar
3tbs single cream
2tbs chopped coriander leaves
salt and pepper

Method:
  • Heat the oil in a large saucepan and fry the onions until soft and lightly browned.
  • Add the ginger, chilli, mushrooms and fry for 5 minutes.
  • Add the chilli powder, turmeric, cumin, coriander, tomatoes and sugar and then cover and cook gently for 10 minutes.
  • Stir in the cream and coriander leaves, sprinkle with salt and pepper and serve straight away with brown rice.
