Spanish Vegetable Tortilla
This is the recipe for the glorious Tortilla that I prepared and ate earlier this week. I hope you enjoy it, I did!
Ingredients: (serves 4)
3tbs olive oil
1 onion - finely chopped
1 red pepper - diced
300g cooked potatoes - thinly sliced
2 garlic cloves - crushed
1 tomato - diced
125g peas
2tbs chopped parsley
1tsp thyme leaves
100ml milk
8 eggs
half tsp curry powder
grated nutmeg
black olives to serve
Method:

Method:
- Heat the oven to 180'C.
- Grease a baking tray.
- Heat the olive oil and gently cook the onion until soft. Add the red pepper and cook for 3 minutes.
- Add the sliced potatoes, garlic, tomatoes, peas, parsley and thyme and cook for 3 minutes. season with salt and place in the baking tray.
- Whisk together the milk, eggs and spices and pour over the vegetable mixture.
- Bake for about 25 to 35 minutes, until the eggs are set and lightly browned.
- Garnish with olives and some thyme sprigs.
- Serve
