Cauliflower Cheese
We had Cauliflower Cheese with our Sunday roast yesterday and it was delicious. If you haven't tried it lately then have a go this week. You can eat it on its own as a great winter lunch with lots of bread and maybe some soup, or serve it with a nut loaf for a filling meal. Just make sure you don't need to do anything too energetic afterwards.
Ingredients: (serves 2)
1 small cauliflower - divided into florets
2 tablespoons plain flour
150ml milk
40g Cheddar cheese - grated
salt and pepper
1 tablespoon breadcrumbs
Method:
- Boil the cauliflower for about 12 minutes until tender. Drain and put in an oven-proof dish.
- Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Slowly stir in the milk, then the cheese and heat, stirring all the time until the sauce is thick. Sprinkle with salt and pepper
- Pour the sauce over the cauliflower and scatter the breadcrumbs over the top. Put under a medium grill until the top is golden brown, and dish up.
So yummy!!
