Rustic Greek Salad
Having just returned from a fabulous holiday in Greece, I have bought back a delicious Greek Salad to share. It is the perfect way to remember happy memories of my spring holiday.
Ingredients (serves 6):
500g tomatoes
175g feta cheese - cut into cubes
half a red onion
half a cucumber - cut into cubes
16 black olives
handful of parsley leaves
2tbs lemon juice
3tbs olive oil
salt and pepper
Method:
- If using large tomatoes, cut them in half lengthways, then cut each half into 3 wedges. If you are using baby tomatoes, then simply cut them in half lengthways. (never serve whole tomatoes of any size to your guests, when tying to cut into them they are likely to get 'sprayed' with juice!). Put the tomatoes into a large bowl with the feta and the cucumber.
- Cut the onion into quarters, then cut each quarter into 4 sections. Scatter the onion over the tomatoes and cheese and add the olives and parsley.
- Pour over the lemon juice and toss the salad very gently. Pour over the oil and toss very gently again, then sprinkle with salt and pepper.
- Enjoy with or in warm pitta bread.
