Spicy Lentil Soup

An easy recipe for a lovely lunchtime dish. Ideal with crusty bread. Thanks to fellow church member, Fred Reading, for this delicious and comforting soup. 

Ingredients (serves 4)
1 onion
1 stick of celery
1 small carrot
150g red lentils
1 litre vegetable stock
2 tbs.vegetable oil
1 tsp cumin
1 tsp coriander

  • Soften the onion, celery and carrot in the vegetable oil for 5 minutes.
  • Add the cumin, coriander, red lentils and vegetable stock.
  • Simmer for 20 minutes.
  • Liquidise.
  • Serve while hot.
