USING UP THE LEFT OVERS - Chicken and Chickpea Curry
We had some left-over cooked chicken from the weekend's Sunday roast and so by adding some chickpeas and a few other basic ingredients, I made up a lovely Chicken Curry with Rice last night. It was so easy and avoided throwing away some very tasty meat. You can turn any left-over cooked meat into a delicious weekday curry within 30 minutes. Go on try it!
Ingredients: (For two persons)
500g of left-over cooked Chicken - chopped into small pieces
2 small onions - very finely chopped
3 crushed garlic cloves
3tbs Tikka Masala Spice Paste (I use Patak's)
400g tin of Chickpeas in water
400g tin of Ratatouille
150g Basmati rice
500ml boiling water
1tsp salt

500g of left-over cooked Chicken - chopped into small pieces

400g tin of Ratatouille

Method:
- Fry the finely chopped onions and the garlic for 7 minutes on a low heat.
- Add the Tikka Paste and stir well over the heat.
- Add the chicken and stir well. Do not increase the heat.
- Add the Ratatouille and stir in.
- Add the chickpeas and stir well.
- Simmer over the low heat for 20 minutes, adding hot water if the curry becomes too thick.
- Meanwhile place the rice in a non-metallic bowl and pour over the boiling water and add salt.
- Cover the rice with cling film and pierce.
- Microwave the rice on high level power for 11 minutes (750W).
- Allow the rice to stand for 2 minutes.
- Drain off any excess water from the rice and serve with the curry.
