Peach Zinger


Peaches are nice and soothing, particularly if you have a sore throat, as I do at the moment, while the bubbles from the lemonade will help to ease a queasy stomach. Nevertheless, this cocktail is a winner whatever the time of day or state of health.  Ideal for a hang-over!

Ingredients: (serves 4)
4 peaches
1tbs citrus cordial
juice of 1 lime
crushed ice
300ml lemonade

Method:
  • Put the peaches in a bowl or saucepan of boiling water for 2 minutes.
  • Run under cold water, then peel off the skins. Halve, pit and chop the flesh.
  • Put the peaches, citrus cordial and lime juice in a blender until smooth.
  • Half-fill 4 tall glasses with crushed ice, add the peach and top up with lemonade.

So soothing!!
