Banana and Walnut Cake
This is a real favourite among friends and family and ideal for a coffee morning or afternoon tea. An easy recipe which will be a hit with everyone. Go on try it!
Ingredients: (serves 6)
250g self-raising flour
half tsp bicarbonate of soda
Pinch of salt
half a lime - juice only
250g bananas - mashed
90g unsalted butter - softened
125g sugar
2 large eggs - lightly beaten
3tbs buttermilk
60g walnuts - chopped

2 large eggs - lightly beaten
3tbs buttermilk
60g walnuts - chopped
Method:
- Pre-heat the oven to 180'C or Gas Mark 4
- Sift together the flour, bicarbonate of soda and salt.
- Sprinkle the lime juice over the mashed banana.
- In a mixing bowl, cream together the butter and sugar until pale and fluffy, then add the beaten eggs and mashed banana.
- Gently fold in the sifted ingredients alternatively with the chopped walnuts and buttermilk, until all the ingredients and thoroughly combined.
- Turn the mixture into a greased 23cm x 13cm (9ins x 5ins) loaf tin.
- Bake for one hour, until the loaf has risen and golden.
- Leave in its tin for 5 minutes, then turn out on to a wire rack to cool.
- Slice and serve with unsalted butter and a nice cup of tea.
