Pepper and Gorgonzola Penne
We love pasta in our house and there is the regular challenge of varying the type of pasta and what to put with it. This is a great pasta recipe that's a bit different. If you don't like Gorgonzola, then you can try Brie instead. Just swap the cheeses and use dill instead of parsley.
Ingredients: (serves 4)
4 courgettes
1 red pepper - cored, deseeded and sliced
1 green pepper - cored, deseeded and sliced
1 yellow pepper - cored, deseeded and sliced
375g penne pasta
175g Gorgonzola (or Brie) - cut into cubes
2tbs olive oil
1 bunch of parsley (or dill) - chopped
a few basil leaves
salt and pepper
Method:

175g Gorgonzola (or Brie) - cut into cubes

Method:
- Grill the courgettes and peppers under a hot grill for 5 to 10 minutes, turning occasionally.
- Cook the pasta according to the packet instructions. Drain well and return to the pan.
- Add the grilled vegetables, Gorgonzola, oil and parsley to the pasta. Sprinkle with salt and pepper, stir over a low heat for 5 minutes.
- Sprinkle with a few basil leaves and serve with garlic bread.
