This unbelievably rich Italian classic is a favourite of mine and can be made in 15 minutes before chilling. A real delight that will impress your guests. If you serve this you might find it hard to get rid of them!
Ingredients: (serves 4)
5tbs strong expresso coffee
75g soft brown sugar
4tbs coffee liqueur (or 3tbs of brandy)
75g sponge fingure biscuits - broken into large pieces
400g ready-made custard
250g mascarpone cheese
1tsp vanilla essence
50g plain dark chocolate - finely chopped
- In a bowl mix together the coffee with 2 tablespoons of the sugar and the liqueur. Toss the sponge fingers in the mixture then pour them into a glass dish.
- Beat together the custard, mascarpone and vanilla and spoon one third of the mixture over the biscuits. Sprinkle with the rest of the sugar, then add half the remaining custard mixture.
- Scatter most of the chopped chocolate over the top, then spread with the rest of the custard mixture and sprinkle the rest of the chocolate.
- Chill for about 1 hour in the fridge until set.
- Serve your true delight!
